Grilled Root Vegetables 

We absolutely love these little grilled root vegetable packages!!  You can either make individual packages or if you are hosting a larger crowd you can use a large metal pan or aluminum dish.  In these particular packages I layered:

  • Carrots

  • Beets

  • Potatoes

  • Green onions

  • Garlic Scapes 

  • 1 Tablespoon butter

  • Keg Spice for flavour

Individual Packages

In the individual packages place a piece of aluminum foil on the counter to use as the base for your vegetables.  Layer the vegetables on top of the foil (as seen in the picture).  Add butter and Keg Spice, and cover with a second piece of aluminum foil on top of the vegetables.  Next fold the edges of the foil inward to seal the package shut.  Place package directly on the grill/smoker/oven.  Cook until vegetables are tender.  

Large Pan Portions

If you are using a large metal pan, place a piece of aluminum foil in the bottom of the pan.  This makes clean up really FAST!  Layer the vegetables (as seen in picture), add butter and Keg Spice.  Cover the dish with a second piece of aluminum foil on top.  Place the foil pan/metal pan directly on the grill/smoker/oven.  Cook until vegetables are tender.  

 

Cooking time will vary depending on how you decide to cook your vegetables.  I grill these over low/medium heat on the barbecue, 500 degrees on a smoker or 350 degrees F in the oven.  It takes approximately 20-30 minutes to cook on the barbecue or smoker but time will vary depending on the temperature of your barbecue or smoker.  If baking in the oven it takes approximately one hour to cook.  The thickness of your vegetables will impact cooking time as well.
