Strawberry Rhubarb Pie

Fresh strawberries and rhubarb are a perfect combination to enjoy at this time of year. If you do not have these growing in your own garden it is a great way to support local farmers.  You can often buy locally grown produce at a farm stand or even a farmer's market.  

For this strawberry rhubarb pie you will only need one pie crust.  The top crust is a yummy crumble top.  I love using stoneware for baking. My pie plate is about 9-10 inches.

The first step is to prepare your favourite pie crust.  You can make one homemade or purchase one frozen.  Either will work just fine!  Do NOT precook the pie crust.  

 

Next ....  

  • Whisk one egg in a large bowl.

  • Add 4 tablespoons of all purpose flour and whisk well.

  • Next add 3/4 cups of sugar and mix until blended. (You could reduce the sugar to 1/2 cup if less sweetness is desired.)

  • Next add 4 cups rhubarb cut into tiny pieces and 2 cups strawberries sliced.

  • Add this fruit mixture to your pie shell and set aside.


For the topping mix 1/2 cup brown sugar with 1/2 cup melted butter. Add 1 1/2 cups oatmeal, 1/2 cup flour and 1 tsp cinnamon. Mix well and spread on the top of the fruit mixture.

Bake at 425 degrees F for 10 minutes. Reduce heat to 350

degrees F and continue to bake for 45-50 minutes until the top appears light brown.

 

I love this pie topped with vanilla ice cream!  So yummy!
