Carrot Pineapple Muffins

These are a family favourite in our home!

Mix all of the following ingredients in a medium sized bowl and set aside.  

1 1/2 cups all purpose flour 

1 teaspoon baking powder 

1 teaspoon baking soda

1 teaspoon cinnamon 

1/2 teaspoon finely ground sea salt 

In a separate large bowl mix:

2 slightly beaten eggs

1 cup white sugar

1/3 cup oil

1/3 cup applesauce (one of those personal sized lunch box ones is perfect!)

1 cup grated carrots

1 teaspoon vanilla

1 cup crushed pineapple (juice included)

 

Add dry ingredients to wet ingredients and mix until moistened.  Do not over mix.

 

Grease 12 muffin tins with butter.  Pour batter into tins.

 

Bake at 350 degrees F for 22 minutes.  You may require additional time depending on your oven.  Once cooked let cool for approximately 5 minutes and transfer to a wire rack.    Enjoy!
