Easy Fruit Crisp 

Baking pies is something not everyone likes to do.  Fruit crisps are the next best thing!  This fruit crisp is fast and easy.  I use a square 7x7 inch dish that is approximately 3 inches deep to make this recipe.  Grease the bottom and sides and add an equal amount of frozen strawberries, frozen blueberries and raspberries (or any of your favourite frozen fruit) until the dish is 3/4 full.  Next pour this frozen fruit into a separate dish and sprinkle the fruit with 2 tablespoons of all purpose flour.  Mix until combined and pour the fruit mixture back into your greased dish.  Next add either a can of cherry or raspberry pie filling to your frozen fruit and mix until combined.  Set aside.    

Now the topping!  In a separate bowl mix:

  • 1/4 cup melted butter

  • 1/4 brown sugar

  • 3/4 cups oatmeal

  • 1/4 cup all purpose flour

  • 1 teaspoon cinnamon 

Mix well and spread on top of the fruit mixture.  Bake at 350 degrees F for 35-40 minutes until the top appears light brown.  We love this with either some vanilla ice cream or whipped cream on top!  Enjoy!
