No Knead Bread - Step Up From Just Plain!
No bread machine required! Just mix ingredients together and let sit overnight. It doesn’t get any easier than this!
In a large bowl whisk together:
1 1/2 cups warm water
1/2 teaspoon yeast
1 1/2 teaspoons sea salt
Mix until yeast has dissolved.
Next add:
2 tablespoons pumpkin seeds
1 tablespoon chia seeds
1/4 cup oatmeal (I use 3-5 minute Quick Oatmeal - that's what I always have on hand)
With a wooden spoon mix until combined.
Next add:
2 3/4 cups flour (I use All Purpose Flour - you could totally use Whole Wheat Flour as well)
Mix until the flour is combined.
Next cover the bowl with plastic wrap and allow to sit 8-10 hours. You could prepare this in the morning and let sit all day or prepare in the evening and allow it to sit all night.
Place a piece of parchment paper (the parchment paper needs to be about the size of a piece of computer paper) on the counter and sprinkle with flour. Remove the dough from the bowl and place the dough on the floured surface. The dough will stick to the sides of the bowl. Scrape as much as you can from the sides when removing the dough from the bowl. It will be VERY sticky. I then sprinkle about 1/2 teaspoon of flour on the top of the dough. Gently shape your dough on the floured surface until it forms a ball. DO NOT KNEAD THE DOUGH. It will be lightly covered with flour. That's perfect!
Place the dough in a greased (I grease my stone with butter) deep stone dish, dutch oven or something with a lid. Allow to sit in the dish for 30 minutes prior to baking.
Bake in oven at 450 degrees F for 30 minutes with the lid on. Remove lid and continue to bake for an additional 13-15 minutes until the bread appears lightly browned. Enjoy!
