Strawberry Rhubarb Crisp
Do you need a quick sweet treat? We love this strawberry rhubarb crisp recipe. It is fast and easy.
I use a square 7x7 inch dish that is approximately 3 inches deep to make this recipe. Grease the bottom and sides of the dish and set aside.
In a separate bowl mix:
-
2 cups frozen sliced strawberries
-
3 cups frozen diced rhubarb
-
1/4 cup of white sugar
-
2 tablespoons all purpose flour
Mix until combined and pour this mixture into your square greased dish. Set aside.
Now the topping! In a separate bowl mix:
-
1/4 cup melted butter
-
1/4 brown sugar
-
3/4 cups oatmeal
-
1/4 cup all purpose flour
-
1 teaspoon cinnamon
Mix well and spread on top of the fruit mixture. Bake at 350 degrees F for 55-60 minutes until the top appears light brown. We love this with either some vanilla ice cream or whipped cream on top! Enjoy!
