Until last year I had not even heard of a garlic scape! I had posted pictures of my garlic and the comments came rolling in about the garlic scapes! I was thinking "what the heck are they talking about"? I was just focused on growing those beautiful little bulbs in the ground. Garlic scapes grow from the bulb of the garlic and then form a coil. The garlic scapes are the first part of the garlic that you are able to enjoy and are quite tender.

Garlic scapes are becoming more popular in Canada and are now commonly seen at farmer's markets and local farms. The garlic scapes are harvested in late spring/early summer. It is important to harvest the scapes (cut them off) so all of the plants energy can focus on growing the garlic bulb itself.
