Butternut Squash Soup! Is that hard to make?

Soup is such a comfort food!
As fall approaches and the weather starts to get cooler outside, I often feel more like cooking and baking. Believe it or not, one of our favourite fall things to eat is butternut squash soup. Apple crisp ranks pretty high too but butternut squash soup is a lot healthier!
This year we were fortunate enough to have had a great harvest of butternut squash from our garden. I have never grown butternut squash so I was not sure how this was going to go. Our pumpkin patch took on a life of its own and took over the butternut squash but we still had a successful harvest.
Making homemade soup is really not hard. Soup is such a comfort food. It hits the spot on those cool days when you have been working outside and just need something to warm you up. Plus, it is a fast meal to prepare when you are rushing off to some after school activity. We spend many hours in a hockey arena during the winter months so soup and tea biscuits often come in pretty handy when we are rushing to get out the door!

This butternut squash soup recipe is quite easy to make. If you are not going to eat it right away you can always put the leftovers in individual containers in the freezer to enjoy later.
